Bicol express I cooked last night, with just the right amount of spicyness!

Bicol express is pork strips and finger chilies cooked in coconut cream / milk, sometimes with shrimp paste. I just cooked this for dinner for the first time and it turned out successfully. And here I was thinking this is a very difficult dish to cook, but I was mistaken. This is a dish that has the right combination of spiciness (from the chilies) and sweetness (from the coconut milk).

The following is the measurements I used when I made the dish. If you’re going to cook this, feel free adjust the ingredients according to your taste.


1/2 kilo pork cut into thin strips

8 pcs finger chili, sliced

2/3 cup coconut cream, diluted in 1 cup water

4 cloves garlic chopped

1 medium onion, chopped

1/2 tbsp shrim paste (optional)

Chilies with tolerable spicyness...

Cooking directions:

1. Fry the pork strips until browned

2. In another pan, saute garlic and onions, then add the pork strips.

3. Add half of the diluted coconut cream and simmer for 5 to 10 minutes, until almost dry.

4. Add the finger chili and the rest of the diluted coconut cream, simmer for five more minutes

5. add salt and pepper to taste and serve hot with rice
